I discovered these breaded olives on holidays and they are amazing! I just couldn’t get enough of them! They are a bit fiddly to make but the results are worth it. They can also be cooked in the oven but it is much faster to do them on the pan.

This toasted Halloumi pitta is a perfect quick lunch to bring into work. The harrissa paste adds some heat to this sambo while the avocado adds a cooling effect. The halloumi can be grilled the night before and it is perfect for the next day.

This is a perfect lunch or supper recipe especially since sweet potatoes cook a lot faster than the white versions. The recipe has a combination of different flavours which all compliment each other and enrich the overall dish. I left the potato skins on and just lightly rinsed and scrubbed.
