This is a perfect lunch or supper recipe especially since sweet potatoes cook a lot faster than the white versions. The recipe has a combination of different flavours which all compliment each other and enrich the overall dish. I left the potato skins on and just lightly rinsed and scrubbed.

This carrot salad is perfect as a side dish to any meal or roasted chickpeas can always be added to make it a more substantial lunch. The dressing make the salad really refreshing adding a bit of zing while the carrots give the salad a really splendid colour and flavour.
I first discovered this in a sandwich deli and I have been trying to replicate it since. Its amazing and sweet and with the red cabbage shredded, the vinegar makes it goes lovely and soft. I love this served on the side with lasange or baked potatoes.
These polenta chips are a good variation from the normal potato chip. They are very filling and the dry polenta coating helps to make them crispy as well. I love these dipped into the garlic mayo and a fresh green salad on the side.
