Beetroot and hummus work really well together and I have combined them in this recipe to tempt the tastebuds. The crispy chickpeas add a bite to this sandwich while the mayonnaise prevents it from tasting too dry.
Since I made my own fresh bagels I started creating some fillings for these. This hummus and halloumi filling combines my favourite ingredients while keeping it as a light lunch.
This beetroot hummus open sandwich is a real showstopper. Its so colourful and a perfect snack on a dull day. The more beetroot added the richer the colour becomes. I have always loved beetroot and it combines so well in the hummus and with the goats cheese.
