These lemon and coconut cupcakes just remind me of summer, the brightness of the icing and the freshness of the lemon. The flavours of homemade buttercream icing always surprises me, it’s just so much stronger than the store bought versions and so amazing when fresh.
These liquoirce and blackberry cupcakes have a slight flavor of liquoirce and a strong taste of blackberry which compliment each other. The buttercream is divine, smooth and full of flavor. I piped the buttercream over these buns but a knife can be used also to just spread it on top.
These marbled cupcakes may be pretty but they are pretty tasty too. Any colour can be used for these but I choose blue and white. This recipe makes about 16 cupcakes and they will keep in the fridge 3-4 days.
