This Blueberry and lemon jam is my favourite any time of the year. The colour is amazing and it’s a bit different from the standard raspberry and strawberry jams. The lemon adds a sharpness to the sweetness of the jam. Chia seeds can also be incorporated into the recipe to add a bit more texture if desired.
- 400g Blueberries
- 100g Jam sugar
- 1 Lemon, zest grated and juiced
- 50ml Water
- Boil Blueberries, sugar water and lemon zest and juice for approx 20 mins.
- Squash the blueberries roughly before transferring to sterilised jars.
