I discovered this chilli and garlic infused oil a few years ago and it has always remained a staple in my cupboard since. The range of flavoured oils is endless and they can always be varied depending on what is in the cupboard. I love it drizzled over pizzas or pasta, it adds a bit of flavour without overpowering the dish. The good thing about making it is that I can use up the olive oil that I have and I can make as much as I require.
- 3 tbsp Dried chilli flakes
- 300ml Olive oil
- 2 Garlic cloves, peeled
- Warm the oil and add the chillis and garlic cloves.
- Pour into sterlised bottles with the chillis and garlic.
