This potato cakes are really filling but they taste amazing. Plus they are great for using up left over mash. They are such a comfort food and they can last up to 3 days. They are very similar ingredients to Potato Rosti’s but the end result is so different.
- 150g Grated potato
- 150g Mashed potato
- 150g Plain flour
- 2 Eggs
- 100ml Milk
- Pinch of nutmeg
- 2 tbsp Mustard
- Place the rated potato in a clean tea towel and squeeze out the excess moisture.
- Combine all the ingredients until a dough is formed.
- Roll onto a floured surface and divide into small portions.
- Flatten out into little patties and fry until brown on both sides.
These potato cakes are perfect for breakfast served hot with a runny egg on top or just for dipping into soup.
