This soup was very surprising since I wasn’t expecting much flavour from Broccoli but this is one of my new favs. The taste is amazing and full of flavour which is enchanted by the saffron. This recipe will make about 2 portions so increase the quantities if you require more.
- 150g Broccoli florets
- 2 Cloves of garlic, peeled & chopped
- 1 Pinch of saffron
- 1 Vegetable stock
- Place all the ingredients in a pot with 250ml of water and simmer for 25 mins.
- Allow to cool for a few mins and then blitz the mixture until smooth.
- Season to taste.
