Breakfast Club Sambo

This week I will be focusing on club sandwich combinations. These are a complete meal in one and something which I can never find when I eat out. I have combined my favourite ingredients to create the utilimate mega sandwiches. I hope you enjoy these as much as I did. The bread can be toasted if preferred but the softer the bread the easiest it is to condense down for eating.


  • 3 Slices of bread
  • 2 Eggs
  • 1/2 Potato Sliced
  • 1 Avocado
  • 1 Onion
  • Handful of Rocket


  1. Fry the potatoes on both sides until brown.
  2. Next fry the onions and eggs.
  3. Smash up the Avocado and spread onto one slice.
  4. Arrange the potatoes, rocket and onion on another slice, place the avocado slice on top, then the eggs and finally topp off with the last slice.
