This dessert is quick to make and contains few ingredients. It’s a good way to use up any left over apples. I usually serve this with some coconut cream and smashed nuts.
- 1 Apple
- 1 tbsp Sugar
- 1/2 tbsp Cinnamon
- 50g Raisins
- 1 tbsp Rum
- First core out the apple, leaving a good base.
- Score a circumference around the middle of the apple, this allows it to expand in the oven without bursting.
- Mix the raisins, sugar, cinnamon & Rum together.
- Pop into the apple and place in a preheated oven at 180 degrees for approx 20 minutes until the juices are bubbling.
