This recipe is quick to make and is delicious. It will make about one serving so just increase the ingredients if you wish for more. The honey really accentuates the taste of the coconut in this recipe while the blueberries add colour and sweetness. Dilute this recipe out if you prefer a smoothie drink.
- 200ml Coconut milk
- 2 tbsp Honey
- 125g Blueberries
- 1 tsp Chia seeds
- 1 tsp Desiccated coconut
- Handful of red grapes sliced in half
- Blend the majority of the blueberries, leaving aside a few for decoration with the coconut milk and honey.
- Pour into a bowl and decorate with the remaining blueberries, desiccated coconut, red grapes and chia seeds.
