Since I made my own fresh bagels I started creating some fillings for these. This hummus and halloumi filling combines my favourite ingredients while keeping it as a light lunch.
- 50g Beetroot Hummus
- 2 slices of Halloumi
- handful of rocket
- 1tbsp Crispy Onion
- 1 Bagel
- Fry the halloumi until crispy on both sides.
- Then cut the bagel in half and toast.
- Top up the bagel with hummus, halloumi and rocket.
- To finish sprinkle over the crispy onions.
