This French Omlette is easy to make and the filling can be varied with lots of different ingredients. I usually make this in the evenings when I am short of time and I just want a light meal.
- 2 Eggs
- 50g Cheddar cheese
- 20g Sundried tomatoes
- 1 Spring Onion, chopped
- 20ml Milk
- Beat the eggs with milk and season to taste.
- Pour into a hot frying pan and simmer for approx 5 minutes.
- Sprinkle over the tomatoes, cheese and spring onion.
- Fold over the Omlette and pop under a hot grill for 2-3 minutes.
