If you are starting to run low on supplies during this blizzard, this is the perfect reusable meal. Actually I feel lucky that my posts this week relate to reusing leftover ingredients, which is good timing with this weather! Believe me it was not intentional. This dish is using some leftover mashed potato with mustard and kale to create potato cakes. I devour these all the time with sweet chilli sauce and garlic mayonnaise.
- 1 Egg
- 3 tbsp Flour
- 200g Potato Mash
- Place the egg in with the mash and mix well.
- Dust a surface with some flour and prepare the mash into fist sized balls.
- Flatten on the floured surface on both sides and pop onto an hot oiled pan and fry for approx 3 mins both sides until brown.
