Pickled plums

At this time of the year there is always a crop of fruit and vegetables in the garden which needs to be used up. So I decided this year to get into Pickling. To sterilise the jars, I washed them in hot soppy water and dried them off in a low oven setting. If there is any rubber seals on the lids remove these before placing in the oven. These pickled plums are delicious served with vanilla or natural yoghurt.

Ingredients

  • 150ml White wine vinegar
  • 4 tbsp Honey
  • 8 Cloves, crushed
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla extract
  • 5 Plums, quartered and destoned

Directions

  1. Boil the vinegar, honey, cloves, cinnamon and vanilla for approx 20 minutes with 150ml of water.
  2. Pack the plums into a sterilised jar and pour over the hot mixture.
