At this time of the year there is always a crop of fruit and vegetables in the garden which needs to be used up. So I decided this year to get into Pickling. To sterilise the jars, I washed them in hot soppy water and dried them off in a low oven setting. If there is any rubber seals on the lids remove these before placing in the oven. These pickled plums are delicious served with vanilla or natural yoghurt.
- 150ml White wine vinegar
- 4 tbsp Honey
- 8 Cloves, crushed
- 1 tsp Ground Cinnamon
- 1 tsp Vanilla extract
- 5 Plums, quartered and destoned
- Boil the vinegar, honey, cloves, cinnamon and vanilla for approx 20 minutes with 150ml of water.
- Pack the plums into a sterilised jar and pour over the hot mixture.
