Polenta is a ingredient which I never really cooked with before and my knowledge was limited in its versatility. So this week the recipes will be based around this ingredients but used in different ways. This polenta porridge gives a variation from my regular oatmeal porridge especially on the chilly mornings we have been experiencing the last few weeks. The toppings can be varied to suit your tastes sometimes I just use bananas and raisins.
- 250ml Water
- 100g Polenta
- 50ml Yoghurt
- 100ml Milk
- 200g selection of berries
- Handful of crushed pistachio nuts
- 2 tbsp Honey
- Place the polenta and water over a bowl of simmering water and stir until it the mixture comes away from the edges.
- Mix in the milk, yoghurt and honey and serve with fresh berries and pistachio nuts.
