This grilled peaches, pistachio nuts and natural yogurt makes a perfect breakfast or even supper. The hot peaches combined with the coolness of the yoghurt is just a perfect wake up meal. I added the pistachio nuts to add more texture to the meal and a bit more flavour.
- 2 Peaches, stone removed and sliced
- 30g Pistachio nuts, de-shelled and crushed
- 120ml Natural yoghurt
- 4 tbsp Honey
- Preheat the grill.
- Arrange the Peach slices on a baking tray lined with greaseproof paper.
- Drizzle with honey and place under the hot grill for approx 3 mins until hot.
- Serve on top of the yoghurt with a sprinkling of Pistachio nuts and a drizzle of honey.
